This one is special, so do not pass it up. Banana Bochet is the most ingredient heavy and labor intensive mead we have offered to date. 100% organic Brazilian honey was bocheted (caramelized), which is an all-day process. Mid fermentation, we added 3 waves of organic bananas totaling 600#s in 45 gallons. Then we loaded it up with meadowfoam blossom honey on the back-end and let it hang out in a Jamaican rum barrel for several months. The result is a straight bananas foster dessert libation.
