Blackberry Upside Down is our Blackberry Mead with Maple Syrup and Graham Cracker. Modified slightly from what first debuted at our 2024 Member Party, this batch tweaks the acid/sugar levels and makes a trade in honey varietal.
With a switch to Maple Blossom honey from OB, we see a more seamless blend of honey and maple syrup. An amped up dark sugar profile pushes the graham cracker considerably further. This also brings the blackberry, fruit acid and tannin into check against the flavors of Maple and Graham, allowing for better balance and truly resulting in dessert in your glass.
