Saskatoon Berry mead with Vanilla Beans aged in used barrels from our friends at Toppling Goliath. Roughly 15 months in the barrels, the effects of extended aging lead to dark fruit flavors. Floral notes will come in waves initially. The barrel pushes forward raisin, fig, stewed fruit and almond and contributes dark chocolate, roast & wood spice. The vanilla is restrained, helping to create a bridge between the early and late palate. Once opened, oxidation will enhance the flavors of stone fruit, raisin and fig, while softening the floral elements of the berry further. Both the vanilla and oak combine to create a burnt custard like profile in the finish with just enough tannin behind it all. We recommend enjoying over multiple sessions.
