Blackberry Berliner is a sour wheat ale that starts with a traditional German malt bill consisting of 50% Pilsen malt and 50% wheat malt. To achieve the tartness and acidity, we kettle sour the wort, meaning we innoculate it with lactobacillus bacteria after mashing and wort run-off but before racking to the fermenter. Finally, we add a generous amount of blackberry that lends a juicy, ripe blackberry flavor and aroma that perfectly complements the tartness of the base beer. The dry finish accentuates the tartness and makes for a dangerously drinkable and extremely refreshing beer.
