We added nearly 2,500 lbs of dragonfruit, pineapple, guava and kiwi puree to our kettle-soured Berliner base to produce Tropical Punch Berliner. Our Berliner Weisse-style base starts with a traditional malt bill of 50% Pilsner malt and 50% wheat malt, which is inoculated with lactobacillus bacteria in the kettle and allowed to sour over the weekend, and then fermented with our house yeast strain. We added the tropical fruit puree at multiple stages to keep as much fruit character around as possible. The result is a dry, tart and sessionable sour ale that tastes dangerously like tropical punch.
