Brewed for release on the Winter Solstice. This Baltic style porter uses open fermentation to give the Kveik yeast its natural conditions and competition from wild yeasts. Then we finished off the brew with bourbon soaked tangerines, cacao and cinnamon. The result achieves the complex richness of a porter with a slight tartness of the interplay of chocolate orange and wild yeast, reminiscent of old fashioned candied oranges. As a wild fermented beer, expect the flavor of this brew to evolve through the winter nights.
