We kettle-hopped this DIPA every 15 minutes of the boil for a vibrant hop character, then topped off the dry-hop with HopFlower -- an enzyme that increases the extraction ratio of all the glorious active components in hops. Mosaic, Idaho 7, and Simcoe take flight on the palate with a berry fruitiness that dips into tangerine tones and dives into a contrasting earthiness under the wings. Medium bodied with a pithy, piney landing.
