Blend n° 13 • bottling date: 11/01/2021 • bottle count: 316 In the search for excellent grapes and varieties, we also started looking into prime regions and primal terroirs. For this Riesling, we found ourselves in the heart of Rheinhessen, Germany. We sourced a few hundred kilos of Riesling grapes with Harth+Harth, an ecological and organic family winery in Saulheim. We destemmed the grapes in-house and put the must on a gentle, young lambik on an ex-Bordeaux oak barrel. Then, we let it macerate for three and half months before blending with a tad young lambik and bottling this grape lambik (we lost 50% due to human error). One third of the lambik volume is also brewed with our own cereals from in and around the Pajottenland. The final fruit intensity is at 632 grams of grapes per litre of finished Druif. 100% 3 Fonteinen brewed lambik. Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and blends.
