What if you combine white peach, white wine yeast and beech wood chips with a Strong Saison? The spiciness of the Saison is nicely balanced by the sweetness of the white peach. The added white wine yeast provides the well-known white wine aromas where the grape predominates. The beech wood chips in turn provide the characteristic tannins that you find in the white wine.
