It began as a table-strength Belgian lambic-style beer that was co-fermented in puncheons with our shared native cultures for over a year. It was then blended with young table saison and mature foeder saison and aged in barrels for another year before it was moved onto California-grown Dream Cot apricots until it fermented to dryness. It was then naturally conditioned in kegs.
