Cigar City’s Production Manager Sean Sasscer makes the best Double IPA’s. Really, the best. Nobody has seen Double IPA’s like the ones that he brews, folks. Don’t take our word for it, just listen to the man himself: “You know, I’m automatically attracted to aromatic hops — I just start adding them. It’s like a magnet. Just add. I don’t even wait. And when you’re a Production Manager, they let you do it. You can add any kind of hops. Add them by the pellets. You can do anything.” “He referred to my late-boil hop additions; if they’re small, something else must be small. I guarantee you there’s no problem. I guarantee it.” “I’m speaking with myself [about hop utilization], number one, because I have a very good brain and I’ve said a lot of things.” “I don’t think I’ve made mistakes. Every time somebody said I made a mistake, they measure my IBU’s and they keep going up, so I guess I haven’t made any mistakes.” In honor of our Production Manager’s unlikely ascent to his position, we’ve brewed his Double IPA recipe that boasts big-league additions (or is it “bigly”?) of Azacca, Equinox, Mosaic, Citra and Simcoe hops to a base of crisp Golden Promise malted barley and a clean fermentation profile from an American Ale yeast.
