Foudre Aged Wheat Ale We brewed a wheat base beer, transferred itninti a foudre for 6 months, and inoculated it with lactobacillus that we made in-house for a touch of tartness. We then re-fermented it with Kolsch yeast and a final dosing of brettanomyces for a slight funky, stone fruit aroma.
