Мёд CM - Pips Meadery

CM is our Wildflower Traditional Mead that was aged in 5 different barrels over the course of 5 years. Not to be mistaken with 5 different barrels being blended together…this mead clocks in 18%, and began its journey in a Knob Creek Rye barrel for 17 months. It was then transferred to a Fiji Rum barrel for 8 months. Once done, it was aged in a Toppling Goliath Stout Barrel for 14 months, then transferred to a Phase Three Portal barrel for 15 months. Finally, it rested in a Maple Barrel for 6 months.
While the base mead itself was once quite simple, the flavors imparted from each barrel itself leads to an explosion of flavors. Cinnamon, Vanilla, Caramel, Clove, Rye Spice & Pepper, Chocolate, Smoke, Roasted Malt Sugars, Maple…
