We aged two Farmhouse style ales—one in a Cabernet Sauvignon barrel and one in a Pinot Noir barrel—each for 27 months. We then took those beautiful, funky, rustic, and slightly floral farmhouses and combined them with 500lbs of fresh, whole Pearson peaches and whole non-pitted California tart cherries. The result is a bright, funky, slightly tart farmhouse with big juicy notes of fresh peach flesh, tart cherry wine, and supplanted by the complex culture that evolved with the whole fruit.
