It is primary fermented in steel with mixed cultures of Brettanomyces and Lactobacillus and then allowed a long quiet maturation on oak. The secondary fermentation of the microflora combined with the red aromatic malt base result in an extremely complex beer with slight caramel flavours and dried fruit mingling with tart cherries, red grapes and earthy funk. A firm acidity, oak dryness and slight vinegar bite you with a quenching and delicious beverage.
