Batch: 002 No of bottles: 1750 Time in barrels: 60 months Titratable Acidity: 14,9 g/L ALC 8.2% VOL This beer pours a beautiful crimson red with an inviting pink head. There is a slight acidic sharpness on the nose that quickly gives way to a full on cherry assault, which carries over into the first sip. There are still traces of tannins and funk from the long Brettanomyces fermentation and maturation in oak, but it becomes clear that the cherries are the star of this show. We took 640 litres of barrel fermented Christmas wheat beer and let it ferment yet again upon 160 kg of sour cherries. After 3 months of wild fermentation and maturation we present this beautiful beer with a delicious tart cherry flavor, a mild acid level and a fairly dry finish.
