Grisette is a style that traces its roots to the late 1800’s in the Hainaut province of Belgium, originally brewed as a staple for the miners of the region. Meaning “little grey” in French, Grisette was to miners as Saison was to farmhands, and while the two styles share a lot of commonalities, traditional Grisettes were typically lower in alcohol, brewed with malted wheat rather than unmalted wheat, focused more on late kettle hop additions, and were fermented somewhat faster and cleaner than their farmhouse ale cousins. Our take on the style incorporates all of these changes to produce a beer that is extremely drinkable, thanks to the low ABV and crisp, dry finish, but also surprisingly complex and flavorful.
