We added freshly juiced key limes and raspberries to a dry, crisp, tart kettle-soured base beer to produce Raspberry Limeade, the perfect summer quencher. It is also the first beer in which we used Clarity Ferm, a gluten-reducing enzyme, and we also adjusted the base beer to use less gluten malts, opting for flaked oats instead of the wheat malt traditionally used in our Berliner/Gose beers. The slightly elevated ABV and high carbonation are a perfect canvas to showcase the more than 300 lbs of fresh key limes and the huge addition of raspberry puree.
