For this imperial stout (another one of the first beers we brewed in 2020) we racked into a variety of barrels, including a few freshly-dumped whiskey barrels from Colorado. After some time, we picked the two very best whiskey barrels and blended them together. The end result was a big and balanced Imperial Stout with pleasant notes of toffee, vanilla and oak.
