The fresh hop gives the beer a juicy citrus and apricot aroma with an earthy spicy character complementing it's mixed fermentation saison base. Each year for the harvest we celebrate by making a fresh hop beer. The hop harvest is around the autumn exuinox, or second harvest also known as Mabon. Mabon is a pagan celebration of the equinox celebrating gratitude for the harvest as well as the balance between light and dark as night and day are again of equal length and of perfect equilibrium. It is a time to give thanks for the summer and pay tribute to the coming darkness. Mabon marks the cusp of transition in the year where the darkness begins to defeat the light. This year we travelled to Hukins Hop Farm to smell and select our hops and chose the variety Ernest because of it's complex flavour or citrus, apricot and spice which would be perfect for 'wet hopping' the fresh hops straight into barrels of mixed fermentation saison.
