We used the Vermont Tropics yeast strain from Berkeley Yeast for this one. It's another one of the thiol-boosting strains similar to the one we used for Wheelz of Steel. This has big pineapple and guava notes on the nose. The palate reflects the aromatic profile with a lingering mouthful of hop character. We dry hopped this first with Citra and Simcoe and finished it with Bru-1.
