This “barrel room” recipe uses wild yeast and sour beers blended and aged 12-16 months in neutral oak barrels, then added to a wagonload of whole cherries to mingle for another two months, before bottle conditioning to perfection in a cozy section of our brewery. The final Dark & Sour stout marries the ultimate flavour combination of sour cherries and dark chocolate, all with a kiss of sweetness, like a Valentines Day of the palate.
