Barrel-Aged Wild Ale w/ Fruit • 7.5% ABV Our latest Fall of Thebes was blended in neutral oak barrels and then matured for 12-18 months in quiet contemplation. We then re-fermented the glorious brew on Riesling grape skins, stems and juice for 3 months and naturally carbonated the results in bottle. Expect high carbonation, dry finish and medium to high acidity.
