This was an experimental brew to see if we could take our American Brown Ale recipe and give it a little bit of tartness by lowering the PH to 4.5 during the mash and adding a slight amount of lactose sugar during secondary fermentation. The result is pretty good. It is NOT a sour and we do not use any crazy yeast combinations. It is simply a Tart Brown Ale. Let us know what you think and we may develop this recipe into a full production beer...
