Sourness is just spontaneous. No brett nor bacteria were added. After the first fermentation in stainless-steel, the beer is transferred to ex Oak Bolgheri barrels (Ornellaia wineries), to receive an ancient Tuscan freshly handpicked wild blackcherries of “Gambolungo” variety. 100% Italian malts for this sour style Ale, spontaneously soured according to the traditional German use of unmilled barley malt to add the microflora.
