Our golden sour beer is a blend of both foeder aged and neutral red wine barrel aged Belgian-style pale ales. After aging a full year we chose beer from the foeder for it's light acidity and tropical brettanomyces character and added it to the barrel aged versio which exhibits a much punchier acidity and a lower brett presence. The blend of these two balances into a much more complex and enjoyable base to enjoy now or years from now.
