A classic saison grist using pilsner, wheat and a touch of rye malts. The flamboyant twist was adding house made pomegranate molasses to the boil and fresh pomegranate and lemon zest to the finished beer. The pomegranate give it a tart tannic structure and the zest plays wonderfully with the yeast driven spicy phenolic aromas and flavour.
