A warming brew, full of spruce honey and spruce tips from friend beekeeper, just 10km from the brewery! Spruce tips provide a light tartness that balances the sweet honey aroma. This brew was aged on lees and was bâtonnaged to get the most out of the wine and beer yeast strains used. Finally it the wax caps were used after fermentation to get the most out of the honey!
