Clear as the sunny blue sky, a Saison fermented with Torulaspora and Kluyveromyces non-saccharomyces strains! Aged on lyees and batonnaged to get some extra complexity from those almost wild yeasts cells! Brewed with extra wild thyme (Thymus capitatus) that grows literally beside the brewery in the summer!
