In collaboration with Black Heath Meadery, Genevieve is definitely one of the most complex traditional meads we have ever made. This mead started with Big Leaf Maple Blossom Honey, a rare honey that must be extracted at just the right time in early spring. Genevieve was first fermented in a rum barrel, then went through a secondary sur lie aging process to add further complexity and mouthfeel. Finally she was rested in a fresh Jamaican rum barrel for further aging.
