Initially fermented in stainless steel, before being transferred into, and aged in a large format foeder for 16 months. Upon maturity in oak it was racked onto 2.5lbs/gal of blueberry, where it conditioned for an additional month on fruit in stainless steel. After its fruiting, it was transferred into our packaging tank where it conditioned for an additional 2 months before being naturally carbonated and conditioned in both green glass and kegs for the past 5 months. Endlessly jammy, yet dry with a noticeable restraint on acidity that is balanced out by a mid palate breadth of oak presence.
