Мёд NN (Orange Blossom) - Pips Meadery

NN is our Fig mead with Orange Blossom Honey, Ugandan Vanilla beans and Aged on Oak Spirals. We've tried in the past with Blind/Lights out to create our interpretation of a Barleywine-like mead, and NN is our most recent attempt. Made with a blend of honey, the opening is definitely fruit forward with notes of date, fig, raisin, and dried cherry. Stewed Fruit, Molasses, and Brown Sugar join in the late palate. The Oak spirals add structure and a bit of needed tannin throughout, while the vanilla is more to smooth out the mouthfeel than provide flavor.
