The Man with the Axe is a Montmorency Cherry Mead with Ugandan Vanilla, aged on Vermouth staves.
Tart cherries meet a light herbaceous quality from resting on vermouth staves. Slightly botanical, with a light bitterness. Offset by a hefty addition of vanilla beans for this batch, with residual honey sweetness propelling these flavors further.
This recipe saw a slight reduction in the cherries, a change in vanilla varietal, along with an uptick in vanilla usage. The ratio changes bring forward a bit more of the herbal qualities of the vermouth while allowing for the vanilla to showcase a bit more prominently.
