Phaethon is the “son” of our Helios in house culture farmhouse but is of a different origin. Taking our gold medal winning dry hopped Pilsner and putting it into a second use bourbon barrel with our house culture, this once clean crisp and floral beer became its own entity and bottle condition until our anniversary in mid January. Full of barnyard funk, delicate citrus and tropical fruit notes from the mixed culture and finishing clean from the Pilsner, this unique beer will set itself from our bronze medal award winning Helios mixed culture farmhouse and create its own place in this world.
