We put our slightly sour Wild Little Thing in rum barrels, then dialed up its tropical bent with purees of guava, strawberry, pineapple, and mango. A bit of lactose and toasted coconut enhance the mouthfeel, while the leftover tannins help each sip finish clean and dry. Recommended aging time: 6 months–1 year
