Wai-iti! Personally, I'd always ask Wai-iti not? And we certainly did. We triple-dryhopped this beer with Wai-iti hops, meaning we took full use of hop biotransformation right at the onset of fermenting, did a 2nd dryhop at high krausen and finished things off with a classic dryhop addition at the end of fermentation. Suave, shrewd, quick-witted and delightfully hoppy. It's Wai-iti!
