The first in a series of experimental beers to investigate the release of bound thiols from hops and malt.
Using Harlequin hops (the UK’s brightest star from the Charles Faram hop breeding program) in the FV and dry hop to give/show off the free thiols we smelt at the annual hop walk.
Calypso hops by Hopsteiner deliver tropical fruit and sweet apple/pear character in the whirlpool addition, but have been chosen for their high level of bound thiols. Using a wine nutrient to stimulate our house lager yeast to free up these thiol precursors we have an intensified hop character not seen before.
