100% spontaneous fermentations of beers, hybrids and ciders from Tuscany, Italy. We only use local organic/biodynamic ingredients, fresh fruits of ancient varieties, foraged herbs, ex Tuscan wine barrels. Our spontaneous fermentations are made possible by exposure in a coolship, or by the addition of the beer wort to a perpetua or by cofermentation with fruits or herbs. We never add any yeast / wild yeast / sour pitch / brett / bacteria.
