Our beloved house saison gets the local wildflower honey treatment.  Primary fermented with our house saison blend for 4 weeks in stainless and then innoculated/bottled with our house brett blend and Caledon Hills Wildflower Honey.  Naturally carbonated and allowed to cellar age for 5+ months in the bottle, we taste mixed fruity citric notes backed by earthy floral notes that cascade into a satisfying mid palate funkatorium of flavor followed by a crisp, yet sweet, mead like finish from the honey addition.
