This past fall we had the great pleasure of being able to travel to Yakima and select hops for the first time. This is something we have been anxiously wanting/waiting to do for years. Hops are, to put it mildly, extremely important to the production of hoppy beer, and it’s no secret we produce quite a lot of hoppy beer, making hops all the more important to us and our brewery. This year we selected for the varietal Mosaic. This was by far the hardest hop we selected for. We went through more lots of it than any other, had extras brought in, and ultimately ended up choosing a previously off the table option that we were happy with. Mosaic can be a lot of things but what we’re after is tropical fruit, blueberry and tropical fruits. We’re thrilled to be able to share our selection of Mosaic with you.
