Trial By Water is the very first release of what we've dubbed our West Town Biers- a series of rustic wild ales fermented and aged in oak with our house culture. Above are bright flavors of pineapple, lychee, mango, and grapefruit. Below are the earthy aromas of a barnyard or basement. Trial by Water is a combination of new and old-world- fresh Strata hops still wet from the bine and dry Belgian-style ale with all its alluring complexity. Trial By Water is dedicated to those tried for witchcraft in the late 16th and early 17th centuries. Zymurgy and witchcraft have a long entwined history, and Trial by Water is a small debt of gratitude to the outcasts and misfits whose craft we are honored to help keep alive.
