When Birdie & Hankie got married in 2021, we racked the base beer of Saison Gwaifā into 2 old bourbon barrels. The aging process allowed the beer to slowly acidify and develop fruity and spicy yeast characters. The aging process on oak not only added low tannins for more structure, but also helped the beer develop honey-like aged character like Gwaifa Chan. Pours deep cold like honey in a jar. Starts with peachy and apricot-like aromas from osmanthus accompanied by floral honey notes on the nose. Drinks with biscuity malts and fig-like dried fruits. Sweetness is balanced by honey lemon tea-like tartness. Finishes medium body with enough booze and tannis to help add structure for a longer finishes.
