A friendly collaboration done with Southward Distilling and AgriSea NZ. Underwater Forest is a peated kelp stout that is all about balance. We sourced the very same Ecklonia kelp from Agrisea that Southward Distilling uses in their Wave gin. While Southward uses it as a drying agent, we used it for umami to balance out the dark chocolate and peat smoke, all very different flavours working in perfect harmony.
