Islay cask Imperial Stout Imperial stout aged in an Islay whisky octave (64l barrel - ex Caol Ila distillery). Brewed with an array of roasted and crystal malts, and fermented with a historical yeast, we cast the wort for this stout directly into the barrel to undergo primary fermentation. An experimental process for us, warm fermentation in a freshly emptied barrel has proved itself a unique process to draw out intense flavours from deep within the wood. Expect peat smoke, campfire, burnt caramel, oak, chocolate and black pepper.
