Our first venture into the world of saisons, or farmhouse ales, this style was requested by the Fort Collins band I am The Owl for a collaboration brew to launch at a concert on 10/27/16. Linsey went to work on designing a classic saison, and the band members joined us for the brew day. The recipe uses French saison yeast, Belma hops, and local Troubadour malt. Saisons traditionally took on special characteristics from the local farms where they were brewed, and, though brewed in an airplane hangar, we think this one is no exception. The beer presents with estery aromas in which you can pick out the citrus, white pepper, and pear that follow into the taste. It finishes with a rich, silky mouthfeel.
