Пиво Elliot (Blend #1) - Perennial Artisan Ales

Elliot is a mixed fermentation saison originally brewed in April of 2017 with a simple grist consisting of Pilsner and white wheat. We then added wildflower honey and Ahtanum hops to the kettle post boil. Initially fermented in stainless steel with a favorite Belgian yeast strain, it was then racked into second use un-rinsed wine barrels where it continued to ferment and age for 12 months. Packaged in May of 2018, this has been conditioning in bottles for almost 2 years. Dry, with a clean lactic bite, however finishes with complex brett and light oxidation we find beautiful in beers like this.
