Мёд Evanesce - Pips Meadery

Evanesce is our Cherry Melomel that was aged for an extended period of time in Used Barrels from our friends at Toppling Goliath. Why did we dress it in all dark? Many reasons: Evanesce means to pass out of sight which is a nod to both the beer previously in these barrels as well as the journey into darkness this liquid took for many months. However, we really wanted to signal that this mead is a bit unlike anything we've made to this point. More drying than some of our other offerings (only by comparison), this one screams with flavor it soaked in from the barrels. Vanilla, Toffee, Chocolate, Char...we hope you enjoy the transformation this one went through.
