You can blame the complex aromas and flavours of this beer on the wild microflora that has been working its magic over time. Although, this golden coloured wild ale has a further dimension brought to it by the addition of fruit. We took a single barrel of a golden sour beer aged for 14 months and let it ferment for a second time upon 60 kg of peaches and 60 kg of apricots. The synergy between fruit, wild microflora and oak components creates a bright, dry and refined beer with a soft acidity and ripe stone fruit flavour.
