Barrel Aged Saison with Lemon And Rose.
Brewed in collaboration with the Manchester Institute of Biotechnology as part of a Knowledge Transfer Partnership, this Wild Ale, Tales From The Future (Istoríes Tos Méllontos), was fermented with a new yeast created by combining a recently-discovered yeast species with a New England brewing yeast. Matured for 18 months in barrel, and infused with lemon juice and rose water, it's zesty, floral and lightly funky.
