Named after the nearby Santa Ynez, this Saison was brewed in our Paso Robles facility & fermented with a Farmhouse Ale/Saison yeast strain in stainless steel. The beer was then transferred to our Barrelworks facility & aged for an additional 5 months in a 19Hl French Oak Oval tank. The mix of fermentation & barrel aging produced aromatics reminiscent of juicy fruit gum, cake frosting & vanilla which meld into traditional flavors of clove & a slight spiciness, ending with an opulent finish.
